Veronica’s Cookbook – Arroz con leche

This is my favorite winter recipe. My grandmother used to make it for me as a kid all the time. Over the years, I’ve perfected her recipe (shh, don’t tell grandma). I can’t hardly wait for it to be cold and snowy outside just so I have an excuse to make this! I love to eat it warm and with extra raisins.

Arroz con leche “Rice Pudding”

Ingredients:

  • 2 cups boiling water
  • 1 cup of MEDIUM grain rice (you have to use medium grain rice or else you will not end up with the right consistency)
  • ¼ tsp salt
  • 2 ½ cups of milk (2% or whole, do not use skim, again consistency is an issue)
  • 2 ½ cups of half and half
  • 1 cup of sugar
  • 1 ½ tsp vanilla extract
  • 1 tbsp powdered cinnamon
  • ½ cups of raisins

In a sauce pan over medium/low heat combine the boiling water, rice, salt and cover. Cook until most of the water has evaporated. Add the milk, half and half, sugar, cover and cook for about 30 on low heat. After 30 minutes, uncover, raise heat to high and continuously stir for 15 min until thickened (yes it will take about 15 min and yes you have to stir non-stop!) Trust me it’s so worth it!! Once thickened, take off the heat and add the vanilla, raisins and cinnamon. Serve warm and enjoy!!
